Below we've listed the herbs we are working with from most sweet to most bitter. We did a taste test with 1/2 gram of each herb steeped in 8 ounces of boiling water for 3 minutes. Flavor is very subjective and hard to describe, that said, below is how we ranked our herbs. We find herbal bitterness to be more subtle and cleaner than hop bitterness.

Yarrow, Aroma is Earthy sweetness. Less sweet than Lemon Balm or Sweet Marjoram. Mildly bitter with Earth tone flavors. One of the first three herbs we started with.
